Creamy. Comforting. Delicious. This pasta is perfect for when you don't know what to eat for dinner.
Ingredients
- 1 box of penne pasta
- 1 white onion, diced
- 4 boneless leg and thigh chicken
- 1 jar of tomato, herbs & spices pasta sauce
- 2 cups of spinach
- 1 cup of parmesan cheese, plus more for topping
- 1 cup of heavy cream
- 1/2 a teaspoon of garlic powder
- 1/2 a teaspoon of black pepper
- 2 tsp. of sugar
- Salt to taste
Instructions
Cook penne pasta as directed on the box.
While the pasta is cooking, heat a large pan over medium to high heat. With a drizzle of olive oil, add the chicken to the pan and add garlic powder, black pepper, and salt and cook for 5 minutes on each side, covered.
Remove the chicken from the pan and allow it to cool. After it cools, dice the chicken into small cubes.
On the same pan, sauté the diced onion and spinach. After 5 minutes, add the pasta sauce and cook it until it starts simmering. Season with salt and pepper.
Add the heavy cream, parmesan, sugar, and the diced chicken to the pasta sauce and stir. Once combined, add the penne pasta and mix it into the pasta sauce. Add salt if needed.
Allow the pasta to simmer for an additional 5 minutes before serving. If you desire, you may sprinkle more parmesan on your pasta.
