Butter Chicken Curry

Creamy and absolutely delicious. This curry is great for any occasion, and its a feel good meal for any time of the day!

 

Ingredients

- 2 lbs. of chicken leg and thigh

- 1/2 a cup of plain yogurt

- 1 1/2 cups of tomato puree

- 1 cup of cream (Heavy cream or milk, if desired)

- 1 tbsp. of garam masala

- 1 tsp. of turmeric

- 2 tsp. of cumin

- 1 1/2 tsp. of red chili powder

- 2 tsp. of salt

- 2 tbsp. of butter

- 1/2 cup of onion

Instructions

  1. Cube the chicken and marinate it for 30 minutes in the yogurt mixed with the spices and salt.

  2. Oil a large skillet on medium-high heat. Stir-fry the chicken for 5 minutes, then set aside.

  3. On the same pan, sauté the onion. Then pour the tomato puree and bring it to a simmer. Add the chicken to the puree and cook it for 15 minutes.

  4. Add the cream to the curry and stir. Cook it for an additional 5 minutes. Add the butter and allow it to melt into the curry. Garnish with cilantro, then serve. This curry is great with a bed of rice or naan!
